Usual oatmeal, grapes, etc.
Baked beans for lunch
PB&J, triscuits and dried pineapple for dinner
Soy milk and coffee (~5:30am)
Half PB&J and more soy milk (~8:30am)
Stadium pretzel with mustard (vegan-ish) and rest of PB&J
Fried pickles with ranch (again, vegan-ish)
Pierogies and tomato sauce
Triscuits with MY homemade hot pepper jelly!
Dinner tonight was a bit of a disaster aka…super fail. Followed this delicious-sounding “healthy vegan” recipe for Vindaloo. Turns out, it substituted too many things to make it both vegan and then extra healthy on top of that. Long story short, not inedible, but just not very good.
However, the yucky dinner made me look up some better recipes, leading to the ultimate find: chocolatecoveredkatie.com
I made chocolate bar pie (without the crust) and it was so crazy rich and delicious! Didn’t taste healthy OR vegan! Put some smashed raspberries on top, and it was magnificent.
